What’s the difference between sushi rice and regular rice?

How do I cook rice perfectly?

The absorption method works well for most varieties: rinse the rice until the water runs clear, then cook with a 1:1.5 ratio of rice to water. Bring to the boil, reduce to a low simmer, cover, and cook for 10–12 minutes. Remove from the heat and leave to steam, covered, for 5 minutes before fluffing with a fork.
