Grown in the UK and produced in collaboration with Hodmedod's, the champions of British-grown pulses and grains, these peas are slow-cooked to perfection with just water and a pinch of salt, developing a beautifully soft, delicate texture and a distinctly nutty, earthy depth of flavour.
Often described as what you might get if a chickpea and a puy lentil had a baby, they share the chickpea's satisfying bite and nuttiness while carrying a chestnut-like warmth and earthiness all of their own. It tastes almost like a very good gravy.Bold Bean Co was founded in 2021 by Amelia Christie-Miller, a former private chef and food sustainability professional whose relationship with beans was transformed by a jar of heirloom butter beans eaten straight from the fridge during a hungover afternoon in Madrid. She returned to the UK determined to recreate that experience, sourcing premium varieties of beans from the climates best suited to each one, slow-cooking them with care and bottling them in tall glass jars with nothing artificial added.
The Queen Carlin Pea, when it launched, became the first British-grown jarred bean to be sold nationally and was featured on Channel 4's Sunday Brunch. A versatile pulse of genuine character, Carlin peas shine in a vast range of preparations: simmered into a savoury spiced dhal with coconut milk and squash, blended into a silky, hummus-like dip with good olive oil and lemon, roasted until crisp and golden for a salad topper with real bite, or stirred through a rich tomato and red pepper stew. Their bean stock is an ingredient in its own right, adding immediate depth to whatever dish it joins.
