Seggiano's Organic Toscani pasta is crafted from 100% organic durum wheat semolina grown in the pristine Orcia Valley of southern Tuscany, a landscape almost untouched by industrial farming. The wheat is fully traceable back to the individual farms where it is cultivated, reflecting the brand's deep commitment to provenance and transparency. Toscani, sometimes known as gigli or lilies for their distinctive petal-like shape, are one of the more expressive and characterful cuts in the Italian pasta repertoire. Seggiano slow-dries every batch at a low temperature for a minimum of 26 hours, preserving the integrity of the wheat and delivering an exceptionally firm, consistent bite that holds up beautifully during cooking.
