There's a particular kind of morning that calls for Spoon Cinnamon + Pecan Granola 400g: half awake, coat by the door, and only time for a bowl before you're out. This small-batch blend keeps its ingredient list short, just eight items, with toasted pecans, coconut chips and a warm dusting of cinnamon in every spoonful. It's the sort of granola that makes rushing out the door feel a little less rushed.
Gluten-free wholegrain oats are baked slowly with coconut chips, date syrup and maple syrup until properly crisp, then finished with pecan nuts and a trace of natural vanilla flavouring. The result is spiced without being sharp, sweet without tipping into sugary, and crunchy enough to hold its own against milk or yoghurt for a good while. Buttery pecans and light, toasted coconut do most of the work, with the cinnamon (just 0.3% of the mix) running through as a background note rather than the main event. Everything in it is plant-based, for what that's worth to you.
Cold milk or a plant-based alternative is the simplest way in, letting the pecans and coconut chips keep their crunch right to the bottom of the bowl. For something more like a proper breakfast, layer it through thick yoghurt with fresh fruit, or scatter it over baked fruit for a bit of texture against the softness. It also stirs well into porridge if you want extra bite partway through cooking. If you like things sweeter, a little extra maple syrup drawn through the bowl will bring the cinnamon and pecan flavours further forward.
Spoon bakes its granola in small batches from short, straightforward ingredient lists, favouring a handful of good things over long ones padded out with fillers. The idea is fresher granola with less waste, made in a way that doesn't need embellishing to taste good. This Cinnamon + Pecan blend, built from eight ingredients and not much else, is a fair example of that approach in a bowl.
